About Chef Micha:
Mitsuharu “Micha” Tsumura was born in Lima, Peru, with roots in Osaka, Japan. He is the head chef and owner of Maido, located in Lima, Peru. Micha studied Culinary Arts and Food & Beverage Administration at Johnson & Wales University (USA), then trained in Japan at Seto Sushi and Imo to Daikon. He returned to Peru, worked at the Sheraton Hotel as Sous Chef and later in Food & Beverage Management. In 2009, driven by a passion for Nikkei cuisine—Peruvian ingredients with Japanese techniques—he launched Maido.
